Chopping

The process of chopping a product to obtain pieces of a similar and uniform size whilst minimizing the number of pieces discarded. The chopped piece is classified by size in a range with a varying tolerance: the greater the tolerance, the greater the difference in the size of the chopped pieces considered compliant. In the case of nuts, conformity of around 80% can be achieved. These percentages decrease substantially if the product is very fragile and crumbly, such as cookies, meringues, etc. The production of flour, on the other hand, involves the grinding of the product to obtain a uniform by-product with a grain size of less than 1 mm.
