Sorting is the procedure through which the compliant product is separated from ones with imperfections or defects of an aesthetic nature (second choice) or related to flavor (insect damage or rancid). The sorting process is performed manually using specific conveyor belts that gradually feed in the product to be selected, thus facilitating the operators’ work.
