Cooking cereal bars, brittle or nougat with an indirect “bain-marie” system which creates a uniform and constant temperature at all points in the cooking tank. The mixtures are blended using different types of specific mixer arms tailored to the product in question. Bain-marie cooking is more effective than indirect cooking methods because it allows more precise control over the temperatures and cooking cycles. Therefore, it is easier to achieve batches of a similar product with fewer variations in color and flavor.
