Coating
Panning machines
The process of coating nuts (or other products) with chocolate (dragées) or sugar syrup (sugared almonds) via a combined process of spraying, rotation and cooling. The coating can be made with different types of chocolate (dark, milk, white, caramel, etc.) and with varying layers. The coating process always ends with a step to add a glossy finish to the product which can occur naturally by exploiting the combined action of hot and cold air, or by using specific additives.
